Elisa… todays special guest is none other than my new sister-in-law. Elisa is not only my other sister, but she is one of my best friends, and an exceptional cook! She can literally make anything– from soup, to omelettes, to spring rolls, to authentic jerk chicken. Needless to say, my brother is one very lucky man. The best thing about Elisa’s cooking skills is that she can make nearly every dish healthy– with the help of spices, substitutes, and of course her special touch. So today, in honour of family day, my new found family member taught me how to make “Oatmeal dark chocolate and date cookies.” They make for a great breakfast, snack on-the-go, and healthy alternative to a sweet tasting delight.
Makes about 24 cookies
Ingredients:
- 3 ripe bananas
- 1 1/2 cup almond milk
- 1 cup yogurt
- 5 cups oats
- 4 eggs (egg whites can be used as an alternative)
- 1 bar of dark chocolate
- 15-20 chopped dates
- 2 tbsp of cinnamon
- 1 teaspoon of vanilla
- 1 cup stevia
- Bake at 350 degrees for 12-14 minutes (small cookies) 15-20 minutes (large cookies)
